Instructions:
- Prepare the dough: In a large bowl, combine the gluten-free flour, sugar, salt, and baking powder. Add the cold butter and cut it into the flour mixture with a pastry cutter or your hands until it resembles coarse crumbs. Add the egg and cold water, then mix until a dough forms. If the dough is too dry, add more water, a tablespoon at a time.
- Chill the dough: Wrap the dough in plastic wrap and refrigerate it for at least 30 minutes to firm up.

- Make the glaze: While the Pop Tarts bake, mix together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
