Gluten-Free Chocolate Banana Bread
Ingredients:
- 3 ripe bananas, mashed
- 2 large eggs
- 1/4 cup melted coconut oil or butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free flour blend
- 1/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional for extra chocolatey goodness)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a loaf pan with oil or line with parchment paper.
- In a large bowl, mash the bananas well until smooth.
- Add the eggs, melted coconut oil or butter, honey or maple syrup, and vanilla extract. Mix well to combine.
- In a separate bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
- Slowly add the dry ingredients to the wet ingredients, stirring until combined.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
