Gluten-Free  Chocolate Banana Bread

Ingredients:

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup melted coconut oil or  butter
  • 1/4 cup honey or  maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free flour blend
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional for extra chocolatey goodness)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with oil or line with parchment paper.
  2. In a large bowl, mash the bananas well until smooth.
  3. Add the eggs, melted coconut oil or butter, honey or maple syrup, and vanilla extract. Mix well to combine.
  4. In a separate bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  5. Slowly add the dry ingredients to the wet ingredients, stirring until combined.
  6. Fold in the chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice, serve, and enjoy this moist and chocolatey banana bread!
