Ingredients:

  • 6 large potatoes, peeled and diced
  • 2 large onions, sliced thinly
  • 4 cups vegetable or chicken broth (or water with a bouillon cube)

Instructions:

  1. Prepare the vegetables: Peel and dice the potatoes into bite-sized pieces. Thinly slice the onions.
  2. Combine in a slow cooker: Place the diced potatoes and sliced onions in the slow cooker. Pour the broth over them.
  3. Cook: Cover the slow cooker and set it to cook on low for 6-7 hours or until the potatoes are tender and the onions are soft and caramelized.
  4. Season to taste: Once done, give it a good stir. Add salt and pepper to taste. Optionally, you can garnish with fresh herbs like parsley or thyme if you wish.
