Ingredients:
- 3 cups cooked pasta
- 2 cups cooked chicken, chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup corn
- 1/2 cup shredded carrots
- 1/2 cup cheese cubes
- 1/2 cup mayonnaise
- 2 tablespoons Greek yogurt or sour cream
- 1 tablespoon lemon juice
- Salt, pepper, and parsley to taste
Instructions:
Cook the pasta, drain, and let it cool. In a large bowl, mix the pasta, chicken, cucumber, tomatoes, corn, carrots, and cheese. In a small bowl, combine mayonnaise, Greek yogurt, lemon juice, salt, pepper, and parsley. Pour over the salad and mix well. Chill before serving.
