Recipe: Classic Depression Era Potato & Onion Stew
This simple, comforting recipe is a throwback to the Great Depression era, where meals had to be hearty, affordable, and filling. It’s a meal your grandpa swore by, with only three ingredients but loads of flavor. Perfect for a cozy, satisfying dinner.
Ingredients:
- 6 large potatoes, peeled and diced
- 2 large onions, sliced thinly
- 4 cups vegetable or chicken broth (or water with a bouillon cube)
Instructions:
- Prepare the vegetables: Peel and dice the potatoes into bite-sized pieces. Thinly slice the onions.
- Combine in a slow cooker: Place the diced potatoes and sliced onions in the slow cooker. Pour the broth over them.
- Cook: Cover the slow cooker and set it to cook on low for 6-7 hours or until the potatoes are tender and the onions are soft and caramelized.
- Season to taste: Once done, give it a good stir. Add salt and pepper to taste. Optionally, you can garnish with fresh herbs like parsley or thyme if you wish.
