Gluten-Free Pop Tarts Recipe: Sweet, Homemade Delights

These gluten-free Pop Tarts are a fun, delicious, and easy-to-make treat. With a crispy, flaky crust and a sweet jam filling, topped with a sugary glaze and colorful sprinkles, they’re perfect for breakfast or a  snack!

Ingredients:

For the crust:

  • 2 cups gluten-free all-purpose flour (with xanthan gum if your flour blend doesn’t already contain it)
  • 1/4 cup granulated  sugar
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg
  • 1/4 cup cold water (more as needed)

For the filling:

  • 1/2 cup fruit jam or preserves (strawberry, raspberry, or your favorite flavor)

For the glaze:

  • 1 cup powdered sugar
  • 1-2 tbsp milk or almond milk
  • 1/2 tsp vanilla extract
  • Sprinkles (optional, for decoration)

Instructions:

  1. Prepare the dough: In a large bowl, combine the gluten-free flour, sugar, salt, and baking powder. Add the cold butter and cut it into the flour mixture with a pastry cutter or your hands until it resembles coarse crumbs. Add the egg and cold water, then mix until a dough forms. If the dough is too dry, add more water, a tablespoon at a time.
  2. Chill the dough: Wrap the dough in plastic wrap and refrigerate it for at least 30 minutes to firm up.
  3. Roll out the dough: Preheat your oven to 375°F (190°C). Once chilled, roll the dough between two sheets of parchment paper until it’s about 1/8 inch thick. Cut into rectangles, around 3×4 inches, using a sharp knife or a pastry cutter.
  4. Assemble the Pop Tarts: Place a spoonful of jam in the center of half of the rectangles. Top with another rectangle of dough, pressing down around the edges to seal. Use a fork to crimp the edges of each Pop Tart to secure them.
  5. Bake the Pop Tarts: Transfer the Pop Tarts to a parchment-lined baking sheet. Bake for 15-18 minutes, or until golden brown and crisp.
  6. Make the glaze: While the Pop Tarts bake, mix together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  7. Glaze and decorate: Once the Pop Tarts are out of the oven and cooled for a few minutes, drizzle the glaze over the tops. Add sprinkles if desired.
  8. Serve and enjoy: Allow the glaze to set for a few minutes before serving.
