- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar (optional)
- 1/2 cup dairy-free milk (or any milk of choice)
- 2 eggs
- 1/4 cup olive oil (or melted coconut oil)
- 1 teaspoon vanilla extract(optional)
- Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan with oil or line it with parchment paper.
- In a large bowl, whisk together the gluten-free flour, baking powder, salt, and sugar (if using).
- In a separate bowl, whisk the eggs, milk, olive oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. The batter will be thick.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
