🍞 Gluten-Free White Sandwich Bread
🧾 Ingredients
3 cups (420 g) gluten-free all-purpose flour (with xanthan gum)
2¼ tsp (1 packet) instant yeast
2 tbsp sugar
1½ tsp salt
1 cup (240 ml) warm milk (or dairy-free milk)
¼ cup (60 ml) warm water
3 tbsp oil or melted butter
2 eggs (room temperature)
1 tsp apple cider vinegar
👩🍳 Instructions
Activate yeast
Mix warm milk, warm water, sugar, and yeast
Let stand 5–10 minutes until foamy
Mix dough (batter-style)
Add flour, salt, eggs, oil, and vinegar
Beat 3–4 minutes (mixer preferred)
Texture should be thick, smooth, and sticky (not kneadable)
Pan & rise
Spoon into greased loaf pan
Smooth top with wet spatula
Cover and rise 30–45 minutes (just above pan edge)
Bake
Oven: 180°C / 350°F
Bake 40–45 minutes
If browning too fast, cover loosely with foil
Cool completely
Remove from pan
Cool fully before slicing (important for gluten-free bread)
